Little monkfish rosemary kebabs

Monkfish is a very tasty fish with no bones, and it has a firm meat. AND it doesn’t smell too fishy… I think it goes very well with bacon and rosemary. I used to do this nibble a lot and then forgot about it for a while…

Ingredients:

  • monkfish
  • bacon
  • rosemary
  • lemon (zest and juice)
  • mayonnaise
  • crème fraîche
  • garlic

Method:

  1. take long branches of rosemary, take away most of the needles, leaving some at the top for decoration (and to prevent the fish from falling of the “kebab”;
  2. chop the needles and mix them with the zest of a lemon;
  3. cut the monkfish into bite size pieces and roll them into the bowl with the rosemary needles and the lemon zest;
  4. roll the bacon around the fish and put on the kebab;
  5. cook on the barbecue or in a grill pan;
  6. in a little bowl mix the same amount of mayonnaise and crème fraîche and the juice of the lemon;
  7. add a pressed garlic clove and mix well, serve on the side.
