Aubergine caviar with focaccia

It’s almost like a sunday… it’s national day, I’m back from holiday and the brain hasn’t arrived yet. I bought only half the stuff that I wanted to buy and the rest, I tried to find it at the gas station shop (yeah..). It’s also the last day of feasting before going back on the diet. so I thought to prepare something that is not completely light (my body wouldn’t accept light *lol*) but on the best way. I used the focaccia I prepared the day before and added a little dip….

Ingredients:

  • aubergine
  • garlic
  • rosemary
  • lemon thyme
  • olive oil
  • onion
  • salt and pepper
  • chilli
  • lemon juice

Method:

  1. prick the aubergine and put it to cook in the preheated oven (220 ° for about 30 min, depending on the size of the aubergine);
  2. once cooked, peal it and chop it;
  3. add the chopped chillli, rosemary, thyme, garlic and onion;
  4. add the lemon juice and the olive oil and season to taste.
