I’ts game season, and to buy a little bit of deer or so doesn’t cost you a fortune, plus to do this recipe you’ll need veeery little. Make sure the meat is real fresh (it’s a carpaccio) but wouldn’t you want it any other way? Anyway, here it goes…
- red wine
- orange juice
- flat leave parsley
- salt & pepper
- hard cheese
- wrap the meat tightly in clean film and put it in the freezer for about 30 min, it’ll be easier to cut (or have your butcher have it sliced for you);
- in a pan melt a nob of butter, add the same amount of red wine and orange juice and let reduce;
- add the ginger, the honey and the cinnamon and let it reduce another little bit;
- season to taste.
- cut the meat;
- serve with a leave of parsley and a thin slice of hard cheese.
