I’ve a special relationship to fall. On the one hand I really love it, the colours, the food and so on. On the other, I can’t wait for it to be over to finally go on to winter :-). Today is one of those days. It sucks. It’s not cold as it should be. It’s gray but it actually isn’t because it’s only fog… or isn’t it? Anyway, back to food :-). Here my next nibble.
- filet of rabbit
- mixed wild mushrooms
- white wine
- olive oil
- salt & pepper
- In a pan with some oil and some butter cook the meat and, after that, wrap it in tin foil to keep it warm;
- in the same pan add some oil and some butter and cook a clove of garlic and some chopped wild mushrooms;
- deglaze the pan with some white wine, add some chopped parsley and season to taste;
- cut the filet into thin slices and serve along with some mushrooms.
