Onion, aubergine and chilli bhaji

I’ve seen it years ago in television, I imagined how it could taste, I was almost able to smell it, I WANTED IT, I wanted to have it. It had to be mine. I just had to find chickpea flour…. but this has not stopped me :-). Next time I’ll also have the one last ingredient I had to do without, but they tasted soo good like this, I cannot imagine they could even taste better ;-).

Ingredients:

  • chickpea flour
  • onions
  • aubergine
  • chillies (jalapeños)
  • salt
  • turmeric
  • cayenne pepper
  • cumin

Method:

  1. prepare the batter with chickpea flour, some water, a little bit of turmeric, cayenne pepper, cumin   and season with salt;
  2. cut thin stripes of aubergine, chilli and cut the onion (they should not be too thick, otherwise they’ll taste raw;
  3. mix the vegetables with the batter and put tea spoon-sized bites in hot oil and fry them;
  4. salt them and serve them with lime wedges.
