Crèpes with prosciutto and cream cheese

After having felt like Tim Allen the other day blow torching my food away (arrrrhh arrrhh) and feeling perfectly happy about it (there might be a little firefan somewhere inside of me) it’s time to reach normality again and go for something a little bit less rustic. I already did this recipe, but with smoked salmon. Here a variation for those who don’t like fish…

Ingredients:

  • eggs
  • flour
  • milk
  • butter
  • prosciutto
  • cream cheese
  • rosemary
  • chilli
  • salt&pepper

Method:

  1. prepare the batter for the crèpes and leave it to rest for half an hour;
  2. then cook the crèpes and let them cool;
  3. chop the chillies and the rosemary and mix them with the cream cheese;
  4. spread the cream cheese mixture on the crèpes, add the prosciutto on top;
  5. roll very tightly and wrap in clean film;
  6. put in the fridge to rest for at least an hour;
  7. take the clean film away, cut and serve.
