I admit it, I’m a passionate supermarket shelf rummager. A while ago I discovered this. A little jar of hummus. It was begging me not to leave it there along with its fellows. And because I’m such a nice person (with food in any case), I bought it. Couldn’t almost wait to get home and taste it. As I opened the jar I felt like the Hammy the squirrel, as RJ opened the bag of nachos…. The smell of cumin, fantastic! Of course, in the future I will try to prepare hummus myself, but as a start I don’t mind this jar….
- olive oil
- lemon juice
- flat leave parsley
- coarse salt
- add the olive oil, the lemon juice and the flat leave parsley to the hummus;
- cut the aubergines into fine slices and cook them in a pan with a little bit of olive oil;
- dry them on some kitchen paper, salt them with coarse salt and cut them into bitesize chunks.
