Pike-perch with leek and lemon pepper

So. 2012 is here. Feelings of not being as thin as before and having to do something about it are coming back. So I need to get distracted, so that I won’t hear them… But, if we don’t consider the crème fraîche, and there is only very little in this dish, it’s not as bad, is it?


  • pike-perch
  • lemon pepper
  • leek
  • crème fraîche
  • lime zest
  • maldon salt
  • vegetable broth
  • ginger
  • chilli
  • coriander
  • soja sauce


  1. prepare the vegetable broth;
  2. add chunk of ginger, cut into pieces;
  3. a chilli, also cut;
  4. and a handful of coriander;
  5. blanch the leek;
  6. put it into icy water and dry it;
  7. put it on the working surface, put the pike-perch fillet on it;
  8. season with lemon pepper and close it, fixing it;
  9. steam it over the broth
  10. while it’s steaming, prepare the sauce with crème fraîche, salt and lime zest;
  11. cut the fish into pieces and serve it with the sauce.
