Somehow I bought too much mozzarella. Or, this one week I didn’t do pizza and so I forgot to tick them off when I sent the order… In my ears I can already hear someone say (read *hubby*) so, do you intend to open a cheese shop or something? And just because there are two or three mozzarellas more than usual. Yes, this is the background information to this nibble. To use off some of this cheese and not like the other day, doing caprese spoons (yes, the same load of cheese).
- black olives
- lemon zest
- olive oil
- cut the mozzarella in to small cubes;
- deesed the olives and chop them, mix all the ingredients and put them on the spoon;
- add the tiniest drizzle of oil and season with maldon salt and some black pepper.
