Tortilla wedges with spring onions and wild garlic

Yey! There’s still wild garlic around! So happy I still could find some, because this recipe is sooo quick and easy, anybody can do it. It’s like, I’m late, still have to prepare dinner, but once the water for pasta is on and the sauce is cooking I don’t have much time left to prepare a little nibble, but I’d like to have a small apéro nonetheless… kind-a-recipe 😉

Ingredients:

  • flour tortillas
  • crème fraîche
  • wild garlic
  • spring onions
  • cheddar cheese
  • black pepper

Method:

  1. chop the spring onions and the wild garlic;
  2. spread some crème fraîche on top of a tortilla, sprinkle the greens on top;
  3. grate the cheese and put it on top of the greens, season with some black pepper;
  4. cover with a second flour tortilla and cook it in a non-stick pan;
  5. flip it to cook on the other side, serve cut into wedges.
