Now that the temperatures are getting pleasant again people start getting out their barbies and grill away anything edible ;-). I wonder why barbecue is so fascinating, is it some cavemen kinda thing? That makes men go all *arhhh arhhh*? Dunno, but it’s nice to have someone cook for you, like, I prepare the veggies, unpack and marinate the meat, put all on platters while my other half starts the barbie and gets himself a beer, then I arrange the table, bring out everything else and serve, while the same other half gets another beer because barbecueing is sooo intense and then putting everything away, but yes, it’s nice to have someone cook for you 😉 and BTW, this isn’t a season’s first, because we already had some barbecues (like, we’re addicted)… But it’s very nice, a lovely little starter.
- mozzarella di bufala
- basil leaves
- maldon salt
- black pepper
- olive oil
- cut the aubergine in rounds and put them on a oiled grilling tin, season with salt and pepper and drizzle some more oil on top;
- add the cut chillies and cook all on the barbie;
- once cooked, chop some basil leaves and assemble the plate with an aubergine round, a piece of mozzarella, some salt and some basil leaves and so on, finish with a small drizzle of olive oil, a sprinkling of maldon salt and some black pepper.
