Beef tartare with wild garlic

Loooove this one, I really do. It’s so quick and easy (actually most of my recipes are, at least I think so). Very little ingredients, like don’t mess with the food if it’s already good in its purest form. So in this case I just prepared a very light pesto with the wild garlic and mixed it with the chopped beef,… et voilà.

Ingredients:

  • prime cut of beef
  • wild garlic
  • olive oil
  • lemon juice
  • salt&pepper

Method:

  1. chop the meat (or let your butcher do it for you) and put it in a bowl;
  2. in a small chopper (or in a high glass so you can do it with tha minipimer) put the wild garlic and a little bit of olive oil and just a squeeze or two of lemon juice;
  3. mix the ingredients and season with some maldon salt and some freshly ground black pepper.
