Now I’m finally starting to find local asparagus (yeah yeah, shame on me that I wasn’t able to wait, but I’m an asparagus-addicted – among other things). So this is a fairly quick little nibbles that involves yummy (and healthy too *yeeeyy*) stuff: asparagus and shrimps. I’ve chosen the white asparagus because it’s flavour is more delicate than the green one.
- white asparagus
- lemon thyme
- crème fraîche
- lemon juice
- vegetable stock
- olive oil
- peel the asparagus and slice it finely and on an angle; cook it in some vegetable stock, adding a little bit of lemon juice until tender;
- prepare the sauce by mixing mayonnaise and crème fraîche in equal quantities, adding some lemon juice and a crushed clove of garlic;
- sautée the shrimps, seasoning them with salt and a tiny pinch of black pepper and adding the asparagus and the lemon thyme;
- serve with the sauce on the bottom and the asparagus/shrimps mix on top.
