Double corncoated chicken nuggets

Around here everybody likes chicken nuggets. So I wanted to prepare some new ones, but with a twist. And since I got a deep fat fryer for my b irthday (not everybody could say that) I thought, why not coating it with polenta flour? And why not go all the way and double coat them and have a hot sauce to go with them?

Ingredients:

  • chicken breast
  • polenta flour (corn)
  • eggs
  • flour
  • salt&pepper
  • mayonnaise
  • crème fraîche
  • chilli powder
  • garlic

Method:

  1. cut the chickenbreast into nuggets;
  2. coat them in flour, dip them in beaten egg and coat them in polenta (do it twice);
  3. fry them until golden brown,
  4. for the sauce use equal quantities of mayonnaise and crème fraîche, add some crushed garlic and a little bit of chilli powder and serve.
