I finally got my birthday present (from last year)… again a kitchen apparel :-), but I’m happy like that. This time it is a mold for ravioli. And since it’s for a nibble I decide to use pizza dough (and also because I always have some of that in the freezer) and make a fresh little nibble you could upgrade to starter with a little salad on the side.
- pizza dough
- ricotta cheese
- grated parmesan
- lemon zest
- roll out the dough very thinly and put it on the mold pressing very delicatly in the middle;
- in a small bowl mix the parmesan, the ricotta and the lemon zest and season to taste;
- put a spoonful of the mixture in the little molds, close the ravioli with some more pizza dough, checking that it’s closed tightly and fry.
