Crostini of pork, balsamic vinegar butter and caramelized onions

It was yesterday… just yesterday I was writing about how nice and warm it still is. Not ‘nymore. Soon I’ll have to start pile the snow away 😉 (just being a little bit melodramatic, bear with me). On the other hand, new stuff starts to arrive from the fields, the trees.. Nature. It’s time for hearty dishes again. Those you wouldn’t think of preparing during the summer because it’s too hot. So, here is one of them…

Ingredients:

  • slow roasted pork (from the day before at best and cool from the fridge, so it’ll be easier to slice)
  • baguette bread
  • butter
  • balsamic vinegar
  • onions
  • sugar

Method:

  1. soften the butter and mix it with the balsamic vinegar, put in the fridge to set;
  2. slice the pork as thinly as possible;
  3. heat some olive oil and butter (equal quantities) in a pan, slice the onions and add them to the pan, cooking them slowly and adding some salt and some sugar;
  4. slice the baguette on an angle, spread the slices with the vinegar-butter mixture;
  5. put the pork on top and decorate with a little bit of onion.
