Warm salad of tomatoes, red peppers and chickpeas

It is not that because the temperatures have dropped near 0 °C that we should say the grill goodbye… So yes, this could be prepared on the barbie but if you’ve already put it away you could prepare this recipe in the oven and it’ll taste nice as well.


  • red tomatoes
  • red peppers
  • chickpeas
  • lemon zest
  • lemon juice
  • flat leave parlsey
  • olive oil
  • salt&pepper


  1. cut the tomato into wedges and deseed it, cut the peppers about the same size and put them both on a tray (or on a baking tin if you’re doing it in the oven);
  2. cook them until the peppers are tender but not sloppy and take them out to cool down;
  3. rinse the chickpeas and put them in a salad bowl along with the chopped flat leave parsley and add the cooked vegetables;
  4. season with lemon zest and juice and salt&pepper and add a splash of olive oil.
