Chicken liver crostini

Just the day before I prepared a chicken liver mousse, and we didn’t finish it. So what to do with this tiny little bit left? One or two crostinis, there’s always a piece of bread to spread it on (and otherwise you could still take out some of that freezed dough, nuke it and bake some focaccia 😉 ).


  • chicken liver mousse
  • crème fraîche
  • thyme
  • red onion
  • bread


  1. mix the mousse with some extra crème fraîche to make it a little bit smoothier;
  2. spread it on some toasted bread slices and decorate with some onions and thyme sprigs.
