Mini savoury scones with beef

…And here an other interpretation of savoury scones, this time with some beef, which is served raw on top of the miniscones.

Ingredients: (makes 10)

  • 175g spelt flour
  • 1 pinch of salt
  • 1 soup spoon of parmigiano
  • 1 beaten egg
  • 60ml cream
  • 45g butter in cubes
  • 1,5 teaspoon baking powder
  • beef, thinly sliced
  • dijon mustard
  • crème fraîche
  • flat leave parsley
  • black pepper

Method:

  1. preheat the oven at 200 °C, sieve flour, baking powder, salt and the cheese;
  2. work the butter into the flour rubbing it through your fingers until you get to a breadcrumbs stage;
  3. with a fork mix in the egg and the cream just until it becomes a fluffy dough;
  4. roll the dough out 2,5cm thick and cut out the scones (with a 6cm diameter you’ll get about 10), remember to dip the cutter into flour each time before cutting the dough;
  5. bake for 8-10 minutes, take ou and let them cool out on a rack under a towel;
  6. decorate with some crème fraîche mixed with dijon mustard, put the thinly sliced meat on top and add some chopped flat leave parsley and some black pepper.
