Mini savoury scones with caviar

No, this time it ain’t the real deal. No real beluga, sevruga, none of that sort. This time I’ve gone for the cheaper sort (also because if I were to get the real deal it’ll have left a whole in my wallet). But anyway salmon eggs aren’t that bad either, and the colours are fantastic. This time it’s scones. Savoury ones. Bon appétit.

Ingredients: (makes 10)

  • 175g spelt flour
  • 1 pinch of salt
  • 1 soup spoon of parmigiano
  • 1 beaten egg
  • 60ml cream
  • 45g butter in cubes
  • 1,5 teaspoon baking powder
  • lumpfish eggs
  • salmon eggs
  • crème fraîche
  • lime zest


  1. preheat the oven at 200 °C, sieve flour, baking powder, salt and the cheese;
  2. work the butter into the flour rubbing it through your fingers until you get to a breadcrumbs stage;
  3. with a fork mix in the egg and the cream just until it becomes a fluffy dough;
  4. roll the dough out 2,5cm thick and cut out the scones (with a 6cm diameter you’ll get about 10), remember to dip the cutter into flour each time before cutting the dough;
  5. bake for 8-10 minutes, take ou and let them cool out on a rack under a towel;
  6. decorate with some crème fraîche and with the fish eggs and lime zest.
