My my, this time of the year is so hectic I’d like the days to have 48 hours at least! No matter what I do, I seem unable to get done all that I want. Too high expectations maybe? Maybe. We’ll leave that… So, back to food. *yelling for some silence* Need to concentrate. Now. What was I saying? The nibble. Yes. What is there to say? A tasty little nibble. This time not associating shell fish with tomatoes but with cream. Was an interesting combination. Next time I’ll try it with smaller mussels though.
- spring onions
- white wine
- preheat the oven and place the lightly but not completely thawed mussels in a pyrex form;
- add some finely diced carrots, tomatoes and finely sliced spring onions on top;
- add a splash of white wine and of cream and put in the oven for 15 minutes;
- season with salt and black pepper.
