Coconut and chicken meatballs soup

Coconut and chicken meatballs soup

An old love of mine, asian food… ok, maybe the western version (note to self, one day I’ll go there) and there are soo many variations… I believe there should be more ingredients going in, but I happened not to have them and tried nevertheless. But it tastes nice, really. It’s kinda comfort food. A warming bowl, a large spoon and you’re good to go.

  • chicken breast
  • coconut milk
  • chillies
  • shallots
  • coriander
  • ginger
  • fish sauce
  • lime juice
  • lemongrass

  1. put the chicken breast along with some coriander, some of the ginger, chilli, the shallots and lemongrass in the blender and mix to a paste;
  2. form small meatballs;
  3. in a pot heat some coconut milk and some fish sauce (just a couple of tablespoons), add the ginger in a chunk, the crushed lemongrass and add the meatballs;
  4. let gently cook for about 10 minutes (until the meatballs are ready) and then remove the ginger and the lemon grass;
  5. add some chopped coriander and some finely sliced chilly and serve.
