Double chocolate muffins

This might sound like news to you, but I’m still allowed sweets, even if on a diet. But virtue stands in the middle, or otherwise said, you can really (REALLY) have a muffin if you stay with that ONE muffin and don’t go ballistic on the carbs… ah, and of course on the sugar… and the chocolate.. my my, let’s move over to the recipe, otherwise I’ll back down and never publish this one…

Ingredients:

  • 200g flour
  • 190g sugar
  • 2 eggs
  • 50g butter
  • vanilla paste
  • pinch of salt
  • baking powder
  • 150ml milk
  • chocolates (small chocolate balls)
  • couverture
  • pearl sugar

Method:

  1. prepare the batter for the muffins mixing first the liquid ingredients and adding the (mixed) dried ones afterwards;
  2. put the batter into the forms and drop a chocolate ball into each one of them;
  3. bake for about 15-20 minutes at 180-190 °C (check with a stick if they’re done);
  4. melt some chocolate (couverture) and pour about a spoon on each muffin, decorating it with pearl sugar.
