Finally! FINALLY! Seems like spring has finally decided to appear. And what is better than a strawberry muffin to feast its arrival? And not just simple strawberry muffins, hell no! TRIPLE. There are muffins in the batter, in the frosting and on top of the muffin 🙂
- vanilla paste
- baking powder
- icing sugar
- prepare the batter using about 250g flour, 190g sugar, 160ml milk, 2 eggs and 50g butter, a pinch of salt, a teaspoon vanilla paste and half a packet of baking powder;
- mix in the food processor and add some diced strawberries;
- bake in the oven for about 20 minutes at 180 °C, take out and put on a rack to cool;
- for the frosting blizz some other strawberries and pass them through a sieve to take out the seeds (we don’t want them in the frosting) and then mix with butter and icing sugar and put a swirl on top of the muffin and decorate with some more strawberries.
