I was very happy of how this recipe turned out. The peppers go very well with the lamb. Tastewise I think it was an encounter of mediterranean and asian cuisine, but that’s just me imagining flavours 😉
Ingredients:
- lamb
- peppers
- onions
- chillies
- coriander
- lime (zest and juice)
- sugar
- fish sauce
- rice vinegar
- olive oil
- salt&pepper
Method:
- heat a pan, add some olive oil and cook the lamb, season it, cover it in tin-foil and let it rest while you cook the peppers;
- slice the onion and the peppers and put them in a pan with a little bit of oil, let them cook a little and add a little bit of water;
- add the chillies, the coriander and stir;
- add the sugar, the fish sauce and the rice vinegar, let it steam for a moment and serve with the lamb on top.
