Shrimps ceviche

This spring wasn’t really here… not yet at least. It’s been raining the whole time, and it was cold. So the first time the sun comes out I wanted to prepare something that would remind us of that sunny day and give us a glimpse of a possible summer…


  • shrimps
  • tomatoes
  • red onions
  • chillies
  • mango
  • coriander
  • lime zest&juice
  • olive oil
  • maldon salt


  1. Cut the cooked shrimps and add in a bowl;
  2. dice very finely onions, chillies,tomatoes anad the mango;
  3. chop the coriander;
  4. add the lime zest and the juice (not all at once, check for eccess acidity);
  5. add a little bit of olive oil and season with maldon salt.
