Aubergine caviar on eggs

It’s incredible but true, it’s july and I’m still on the very same diet I started at the beginning of the year. I was able to loose some weight, had some ups and downs but I’m still going strong and trying not to succomb to too many salty and fatty goodies (such as spare ribs…, ah, I’d love to have some spare ribs).. but, I was going off on a red herring again. So let’s try to go back to this recipe. The aubergine caviar is the very similar to the other one you can find on the blog (recipe here: link), but, since I’m being me, I changed it a little bit 😉

Ingredients:

  • aubergine
  • flat leave parsley
  • red onion
  • lemon juice
  • garlic
  • chilli
  • salt&pepper
  • olive oil

Method

  1. cook the eggs, let them cool, peal them and slice them;
  2. prick the aubergine and put it to cook in the preheated oven (220 ° for about 30 min, depending on the size of the aubergine);
  3. once cooked, peal it and chop it;
  4. add the chopped herbs, the onion and the garlic;
  5. add the lemon juice and the olive oil and season to taste and serve on a slice of egg.
