Back from two weeks abroad enjoying the sun and the beach of the lovely italian region of Puglia and it’s hot here too!!! Yeeeeyy, finally! It’s so hot that you can have cold soups, just like this one. It’s just a few ingredients, but they go very well together.
- lemon balm
- vegetable stock
- olive oil
- peel the mango and the cucumber (in terms of quantities there should be a little bit more mango than cucumber) and put them in the blender along with a little bit of vegetable stock you prepared earlier and left to cool;
- blizz it and season to taste, adding some chopped chillies (I used habaneros) and lemon balm;
- in a hot grillpan add a little bit of olive oil and cook the scallops;
- put them on top of the soup and serve.
