Belle Hélène cupcakes

So, I’ve got these pears. Lovely, but still a bit unripe. What to do with them? Why not cupcakes with a little bit of 70s flair? Whoa! This is much older than the 70s… I just cheked on holy google and it was invented in 1870 by none the less Auguste Escoffier. I probably shouldn’t mess with it then…. or I’ll have him spin in his grave… (which is kinda spooky)


  • 200g flour
  • 190g sugar
  • 150ml milk
  • 50g butter
  • 60g cocoa
  • 2 eggs
  • pinch of salt
  • baking powder
  • cinnamon
  • pears
  • butter
  • icing sugar
  • milka philadelphia


  1. prepare the cupcakes by mixing the wet ingredients and adding the dry ones;
  2. line a cupcake tin and pour in the liquid, bake for 15-20 minutes in a preheated oven at 190 °C;
  3. peel the pears, cut them into small cubes and cook in a pan with a little bit of water and sugar and adding some cinnamon;
  4. prepare the buttercream by mixing the philadelphia with butter and icing sugar;
  5. make a hole on the top of the cupcake and put in a spoonful of the cooked pears and cover with the buttercream.

    Even if pears are not my favourit fruit, I really liked it!!
