Roasbeef with red peppers fillo cigars

It’s hard to believe that there could be something like meat leftovers… But still. Sometimes it’s the case and this recipe here it’s an example of what one could do with it. You could have it just like that, or thinly sliced in some fresh crusty bread. Or.. As I said before, you could have it as this little nibble right below 🙂


  • leftover roast beef
  • fillo pastry
  • red peppers
  • chilli
  • spring onions
  • lemon zest
  • lemon juice
  • aged cheese (not as aged as parmigiano though, I chose a mountain cheese)
  • salt&pepper
  • olive oil


  1. heat the oven to 180 °C;
  2. slice the roast beef and put it on a plate;
  3. dice the red pepper and the chilli into very small cubes and mix with the grated cheese, season with salt&pepper;
  4. put the mixture on the sheet of fillo pastry (a square of 12x6cm average), brush with oil and roll, brush also on top and put it in the oven;
  5. slice the spring onion into thin rings, mix with the lemon juice and the zest, add some salt&pepper and add some olive oil, mix well and pour over the sliced meat;
  6. put the fillo cigars aside the meat and serve.
