Triple rasbperry minimuffins

I’ve been staring at this page for the last five minutes and nothing came to my mind. This cannot be! A writers’ block? Come on! Get a grip and think! Think harder! What can I write about these minimuffins? It was a joy to see how quickly they disappeared in my childrens’ mouth. “Mommy! How is it that you can prepare things that are sooo good”? Ah, when life always could be so easy as to prepare some minimuffin 😉


  • 190g sugar
  • 200g flour
  • 2 eggs
  • 150ml milk
  • salt
  • baking powder
  • raspberries
  • 50g (+some more for the buttercream) butter
  • icing sugar


  1. prepare the batter for the minimuffins mixing the wet ingredients and adding a handful of fresh raspberries, and after that the dry ingredients;
  2. bake the muffins in a preheated oven at 180 °C for 15 about minutes;
  3. once cooked take them out and leave to cool;
  4. prepare a buttercream adding some raspberries here as well;
  5. prepare a coulis of raspberries mushing some of the berries with some icing sugar;
  6. carve a little hole on top of the minimuffin and put some of the coulis inside and pipe the buttercream on top;
  7. decorate with some nonpareilles and serve.
