Ananas minimuffin

What was I saying the other day? I had to practice my swirl? Well… couldn’t leave it just like that, so here another recipe for a minimuffin (this time). It has ananas in the batter and a little ananas piece on top. Actually that one on top I would have wanted to have it chip-like, but… I thought of doing it too late, and the muffin were already in the oven. Next. Time. Promised.


  • 200g flour
  • 190g sugar
  • 50g butter
  • ananas
  • 150ml milk
  • 2 eggs
  • salt
  • baking powder
  • butter
  • icing sugar
  • vanilla paste
  • cream cheese


  1. prepare the batter as usual, mix dry and wet ingredients separately and mix together, this time add a little bit of pureed ananas to the mixture;
  2. bake in the oven for about 15-20 minutes at 180 °C, take out and leave to cool;
  3. prepare the frosting by mixing butter, cream cheese and icing sugar in a 1:2:1 ratio, adding a little bit of vanilla paste;
  4. put in a piping bag and make a swirl on top of the minimuffin, adding a little bit of fresh ananas on top.
