Lemon curd muffins

It’s dessert time again. I recently bought some tips online and had to practice my swirls, and so, to catch more than a fly, I decided to prepare some muffins, AND with lemon curd (so I got to taste that one too, yeeeyy). By now you must think that I’m nuts. Well. Possibly. Or maybe not. Let’s stick to the muffins and leave my mental sanity alone… 😉


  • 200g flour
  • 190g sugar
  • 50g butter
  • 2 eggs
  • 150ml milk
  • salt
  • baking powder
  • lemon curd
  • butter
  • icing sugar
  • philadelpia
  • lemon curd
  • fondant


  1. prepare the batter for the muffins as usual, mixing the wet and the dry ingredients separately and combining them, add a little dollop of lemon curd in the wet mixture;
  2. pour the mixture and bake for about 15-20 minutes in a 180 °C preheated oven, take out and leave to cool;
  3. prepare a buttercream using philadelphia, icing sugar and butter, in a ratio of 2:1:1 and add a few drops of lemon aroma;
  4. put in a piping bag and swirl away;
  5. decorate with a little heart, made of fondant.
