Christmas is just around the corner and I only have a couple of minutes to post this recipe. It’s perfect for a starter and has a little bit of heat (given by the chillies). You wouldn’t think that the aubergine goes so well with the shrimps, but actually, it tastes really nice, so give it a try and enjoy.
- flat leave parsley
- lemon zest
- lemon juice
- olive oil
- prick the aubergine with a knife and cook in the oven, peel, mush it with a fork and put it in a bowl;
- add the chopped chillies, tha flat leave parsley, the garlic, lemon juice, salt&pepper and olive oil;
- sautée the shrimps in a pan, season them and take out to cool;
- mix a little bit of crème fraîche with the lemon zest and serve with the aubergine on the bottom, the shrimps nicely arranged over it and a little bit of crème fraîche and some more flat leave parsley on top.
