Chai and lemon curd muffin

This year it seems more difficult to get into the Christmas season’s spirit, dunno why, it seems just like yesterday I was sunbathing and now it’s time to take out the mittens and the heavy clothes … Maybe this will help. A tasty little muffin with a hard bottom and a creamy lemon curd buttercream… just to keep the calories going and the liver happy 😉

Ingredients:

  • 190g sugar
  • 200g flour
  • 2
  • eggs
  • 150ml milk
  • 50g butter
  • salt
  • baking powder
  • lemon cookie dough (yes yes, I bought this one, shame on me)
  • lemon curd
  • cream cheese
  • butter
  • icing sugar
  • lemon curd

Method:

  1. prepare the muffin batter as usual just adding the content of 1 chai tea bag (there is plenty of explanations on the blog, so feel free to browse the recipes 😉
  2. roll out the cookie dough and cut out some 4 points-stars, put them on the bottom of the muffin paper layered tin;
  3. add the batter and cook;
  4. prepare the butter cream using a 1:1:2 ratio for icing sugar, butter and creamcheese, and add a dollop or two of lemon curd;
  5. squeeze on top and decorate with some golden pearls.
