Peanut and caramel minimuffins

It’s cold outside. Like really cold. And I think it’s understandable that kids don’t want to go outside to play, especially when it’s cold and foggy… Sometimes I can hear them say, but mommy, the sun is shining, can we go out without the jacket (are you kidding me? With -5 °C???). So alternatives are required. Like window drawing. Or, for instance baking. Like this recipe here, you can enlist little helpers to open and peel the peanuts for the batter… 😉

Ingredients:

  • 200g flour
  • 190g sugar
  • 2 eggs
  • 150 ml milk
  • 50g butter
  • peanuts
  • salt
  • baking powder
  • icing sugar
  • butter
  • mascarpone
  • sugar
  • caramel sauce

Method:

  1. blend the peanuts and add them to the usual muffin batter and bake by 180 °C for 15-20 minutes;
  2. prepare some caramel and spread it on a oiled sheet of parchment paper;
  3. prepare the caramel frosting mixing icing sugar, butter and mascarpone in a 1:1:2 ratio and add a little bit of caramel sauce;
  4. break the caramel, frost the muffins and insert a shard of caramel on top.
