Cinnamon whoopie with white chocolate frosting

Tuesday I told you that I put too much batter into the minimuffin tin and so got to do two desserts. Well, this ist the second one. White chocolate frosting whoopies. What are whoopies? Essentially, they’re the top of a muffin cut off and used in pairs, and with frosting in between (… there still are people around that don’t know whoopies, yes.)



  • 200g flour
  • 190g sugar
  • 2 eggs
  • 50g butter
  • 150ml milk
  • salt
  • baking powder
  • freshly ground cinnamon
  • icing sugar
  • butter
  • white chocolate


  1. prepare the batter for the minimuffin as usual, by mixing the wet and the dry ingredients separately, combine them and pour the batter into a minimuffin tin (greased or lined with papers);
  2. cook the minimuffins for about 15-20 minutes in a 180 °C hot oven;
  3. melt some white chocolate and mix in with the butter and icing sugar, this time you’ll have to add some more icing sugar (the ratio won’t be 1 butter : 2 sugar, but a little bit more, like 3 sugar);
  4. once the muffins are completely cool, cut off the top, and “discard” the inferior part… (or, use it for another nibble);
  5. pipe some frosting on one half of the whoopie and cover it with another minimuffin top.
