Orange and coconut milk muffins

I know, yet another muffin. Boooooring. It isn’t, ok? They’re fun, ’cause they’re quick to make, you don’t need to be overprecise with the dosage (and this is fine with me, ’cause I’m kinda of let’s throw a couple of things together, I know it’ll be good kinda of person). So, bear with me and do try it, because the blood orange make it really interesting and not oversweet (if you left out the buttercream…)


  • 200g flour
  • 190g sugar
  • 150ml coconut milk
  • 50g butter
  • 2 eggs
  • pinch of salt
  • baking powder
  • blood orange fillets
  • butter
  • icing sugar
  • coconut milk
  • food coloring


  1. prepare the batter as usual mixing the wet and the dry ingredients separately and combining them afterwards, adding the blood orange fillets while you’re mixing;
  2. pour the batter into the linings and bake for about 20 minutes, take out and leave to cool;
  3. mix the butter and the icing sugar in a 1:2 ratio adding a couple of spoons of coconut milk and food coloring;
  4. pipe on the muffins and decorate with sugar pearls.
