Chocolate muffin with vanilla marshmallow frosting

Now it’s the time of the year in which I start hear strawberries calling to me. I know, I know. They’re by no means seasonal yet. Yet it’s a siren call. Cannot. Resist. Don’t want to either. So, to keep it to a minimum I just used some of them for decoration on top of this minimuffin that has something new for me. The marshmallows in the frosting. Yummy!


  • 190g sugar
  • 200g flour
  • 2 pinches of salt
  • 2 eggs
  • 50g butter
  • 150ml milk
  • 60g cocoa powder
  • icing sugar
  • butter for the frosting
  • marshmallows
  • food coloring (gel)
  • strawberries


  1. as usual, prepare the batter for the minimuffins (also add a teaspoon of vanilla paste) and bake them for 15-20 minutes at 180 °C, take them out, let them cool completely;
  2. take a small bowl worth of marshmallows and microwave them for 30 seconds at 750W (for me it worked like this, you’ll have to check with your own microwave oven though);
  3. once they’ve melted mix them with the icing sugar and the butter and add a couple of teaspoons of vanilla extract and a pinch of salt, pipe on top of your minimuffins and decorate with the strawberries.
