Miniburgers with bacon, blue cheese and asparagus

These are mini, bitesize burgers with asparagus, bacon and blue cheese. Very yummy and easy to make. The bread you can make in advance and it also freezes very well. So why just not make a bunch, so that you’ll only have to take them out, defrost them and you’re ready to go.

Ingredients (makes 12 normal sized buns):

  • 500g flour
  • 240ml milk at room temperature
  • 60g soft butter
  • 1 egg
  • 3/4 teaspoon salt
  • 3 soupspoons sugar
  • 1 soupspoon dry yeast
  • ground mixed meat (pork and beef)
  • bacon strips
  • blue cheese
  • asparagus
  • olive oil
  • salt&pepper

Method:

  1. add sugar and yeast to the milk and let it sit four a couple of minutes, mix flour, butter, egg and salt in a bowl, add the milk and mix to a dough;
  2. cover and let it rise for 1 hour, after that kneed well and divide into 12 pieces, form little balls, flatten them down to 1cm of height and let it rise for another 45 minutes;
  3. bake at 175 °C for 15 minutes and let them cool on a rack;
  4. cook the strips of bacon, take them out of the pan, form the small burgers with the seasoned ground meat and cook them in that same pan (no need to waste that tasty bacon fat);
  5. cut the buns open, spread a little bit of blue cheese, add the burger, the piece of bacon and two slices of raw asparagus, cover, secure witha   stick and serve.
