This is so quick and easy it’s almost embarrassing, but I’ve been busy on another project (a big one involving a two-tiered birthday cake – my first two-tiered BTW). So I hope you’ll like this anyway. It tasted really good actually, and if I had taken green olives it would have looked better as well, but the pantry offered only black ones…
- buffalo mozzarella
- black olives
- olive oil
- lemon juice
- deseed the olives and process them along with the chilli, the basil, olive oil and lemon juice, season to taste;
- cut the buffalo mozzarella into cubes and mix with the marinade;
- let it rest for a moment and enjoy.
