Corn cream soup and tomato salsa with cumin

I came up with this idea to hide the veggies a little bit and make my children have more of them. It was a partial success. They absolutely loved the tortilla and disdained the soup. Fair enough ;-/ But I can assure you, for grown-ups it’s really tasty, quick to make and easy to prepare 🙂

Ingredients:

  • corn
  • tomatoes
  • spring onions
  • chillis
  • vegetable stock
  • cream
  • crème fraîche
  • cheddar
  • salt&pepper
  • cumin
  • tortillas
  • ham
  • olive oil

Method:

  1. take away the corn from the cob (or open the can 😉 ) and put it in a pot with some vegetable stock and cook until tender;
  2. add a little bit of cream and blizz it;
  3. on the side finely chop some tomatoes, add chopped chillies and spring onions;
  4. ground some fresh cumin and add with salt&pepper and olive oil to the salsa;
  5. spread some crème fraîche on a tortilla, add a slice of ham and grate some fresh cheddar, cover with another slice of tortilla and cook in a non-stick pan until the cheese melts;
  6. pour a spoonful of salsa on top of the soup and serve with two wedges of tortilla.
