You can make a batch of little puff pastry cushions and keep them in a zip lock bag for a couple of days. And make plenty of interesting little nibbles, sweet and savoury ;-). This one is sweet. And a little bit tart thanks to the lemon curd, which is mixed in the whipping cream and also in the icing on top of the puff pastry.

- whipped cream
- icing sugar
- lemon curd
- prepare the puff pastry cushions;
- whip the cream and add some lemon curd to it, pipe it in the cushions and add some clean and opened raspberries;
- prepare a little bit of icing by mixing lemon curd, icing sugar and (if needed) a little bit of water, sprinkle on top, close the cushions and serve.
