Millefeuilles with raspberries and lemon curd whipped cream

You can make a batch of little puff pastry cushions and keep them in a zip lock bag for a couple of days. And make plenty of interesting little nibbles, sweet and savoury ;-). This one is sweet. And a little bit tart thanks to the lemon curd, which is mixed in the whipping cream and also in the icing on top of the puff pastry.

Ingredients:

  • puff pastry cushions
  • whipped cream
  • raspberries
  • icing sugar
  • water
  • lemon curd

Method:

  1. prepare the puff pastry cushions;
  2. whip the cream and add some lemon curd to it, pipe it in the cushions and add some clean and opened raspberries;
  3. prepare a little bit of icing by mixing lemon curd, icing sugar and (if needed) a little bit of water, sprinkle on top, close the cushions and serve.
