Vanilla rice pudding with raspberries and chocolate

It’s what you prepare if you’d think you’ve enough time and while you’re doing it you reckon that you won’t finish in time 😉 Seriously, this one I thought would go quicker than it actually did, in the end it took about 30-40 minutes to prepare it all. In the end, that’s not that bad, is it?

Ingredients:

  • risotto rice
  • butter
  • milk
  • sugar
  • salt
  • vanilla paste
  • chocolate
  • raspberries

Method:

  1. cook the risotto rice as you would a normal risotto, so putting a little bit of butter in a pan, add the rice, and then slowly start to add the liquid in this case milk instead of stock;
  2. add sugar, vanilla paste and don’t forget a little bit of salt;
  3. decorate with some melted chocolate and add some fresh raspberries on top.
