This time I didn’t do it all on my own. But I was eyeing that packet of falafel mix for months now. So, better now than never, I bought it and prepared the falafel, accompanying them with an aubergine mix. The result was lovely, and next time, I’ll do the falafel mix by myself allright.
- falafel mix
- lemon juice
- olive oil
- prepare the falafel according to the instructions on the packet and fry them;
- cook the aubergine in the oven, skin on;
- once cooked, peel and smash with a fork;
- mix along with chopped chilli, coriander and garlic, add some tahini paste, season with salt&pepper, olive oil and lemon juice and serve.
