Grilled asparagus with smoked salmon and hollandaise sauce

Ok. Ok. I’ll admit. This one’s NOT light. But what the heck. One is allowed a sin every now and then, no? And besides, there wasn’t too much butter involved. And the smoked salmon, of course. But nonetheless, I think it’s a nice little starter to have, once in a while. So give it a try. It’s really no biggy 😉


  • asparasgus
  • smoked salmon
  • egg yolks
  • butter
  • white wine vinegar
  • lemon juice
  • salt&pepper


  1. grill the asparagus and leave to the side to cool a little bit;
  2. melt some butter in a pan once it foams take it from the heat;
  3. in the mixer put the egg yolks and the seasoning and blend them for a minute;
  4. after that add equal quantities of lemon juice and vinegar and continue blending;
  5. after that add the melted butter in a steady trickle;
  6. wrap some smoked salmon around a couple asparagi and serve with a little bit of hollandaise sauce on top.
