Cramberry muffin

Cramberry muffin

I wanted to prepare new muffins, not the usual ones, but with a different, cheese-cakey-kind of bottom and… lucky me, I had a small box of cornflakes that I received for free from the supermarket (and that nobody was going to eat). So, why not blizz them to powder and add them to the bottom of the muffin?

Ingredients:

  • 190g sugar
  • 200g flour
  • 150ml milk
  • 2 eggs
  • 50g butter
  • vanilla paste
  • 60g dried cramberries
  • salt
  • cornflakes
  • butter
  • icing sugar
  • cream cheese
  • fondant
  • sugar pearls

Method:

  1. blizz the cornflakes and mix them with some melted butter, add them to the bottom of the muffin tin (layered with papers) and put in the fridge to set;
  2. prepare the muffin batter as usual, mixing separately the dry and the wet ingredients and them combining them together, adding the dried cramberries at last;
  3. bake them for about 17 minutes at 180 °C in a preheated oven take out and leave to cool;
  4. prepare the cream cheese frosting and roll out the fondant, cutting out some flowers and attaching some sugar pearls on them with a little bit of water;
  5. practice your swirl on top of the muffin and decorate with a fondant flower (I might decide to buy some special fondant cutters….)
