I remember posting the recipe for an octopus salad back in 2011… So I thought to myself, why not prepare another one? Another take on octopus salad? Yeah, why not? It’s different, different textures, different (well, ok, not all of them) tastes… but nevertheless. New octopus salad coming right up 😉
- flat leave parsley
- lemon juice
- olive oil
- first things first, you ask your lovely other half to grill the octopus for you (why bother, if someone does it for you?) and leave to chill overnight in the fridge (or, skip this passage and have a lukewarm grilled octopus salad);
- chop it to pieces and add concassé of tomatoes, finely chopped flat leave parsley and garlic;
- add lemon juice and olive oil and season to taste.
