Stuffed olives with hot tomato salsa

There. It was looking at me from the fridge. This tiny amount of pizza dough, left over from the day before. Too small to do something with it. Or is it? Looking a little longer in the fridge (and remembering to close it every now and then because the lights started blinking) I found some olives and a small piece of provolone cheese and this is what came out of it 😉


  • pizza dough
  • olives
  • provolone cheese
  • tomatoes
  • sundried tomato paste
  • chilli
  • spring onion
  • lemon juice
  • olive oil
  • salt&pepper


  1. deseed the olives and stuff them with a little piece of provolone cheese;
  2. take small blobs of dough, flatten them out a little bit with your fingers and roll the olives in it, pressing it together so that the cheese won’t come out;
  3. fry the blobs until golden;
  4. put tomatoes, sundried tomato paste, chillies, spring onion, olive oil, lemon juice and salt&pepper in the blender and mix it to a paste to serve along the stuffed olives.
