One of my major project. Actually a jaw-dropper in our house. The birthday girl was very very happy when she saw it and went asking “but is there a real Barbie in there”? And I have to thank lovely Elise from MyCupcakeAddiction for her wonderful tutorial on how to make marshmallow fondant (How to Make MARSHMALLOW FONDANT). It got decreeted as best fondant ever, never to buy the usual one anymore…. So, back to the cake. It looks like a LOT of work, and in fact.. it kind of is, but you can distribute it on a couple of days (the figurines out of fondant even longer, because they have to harden). Ingredients:

  • 380g sugar
  • 400g flour
  • 300g milk
  • 100g butter
  • 4 eggs
  • baking powder
  • salt
  • butter
  • icing sugar
  • food coloring
  • marshmallows
  • water
  • vegetable fat
  • white chocolate
  • whipping cream
  • strawberries

Method:

  1. prepare the marshmallow fondant using the recipe shown in the link, color it and prepare the little figurines you want to decorate your cake with;
  2. prepare the two cakes mixing the dry ingredients and adding the liquid ones and bake at 180 °C for 15-20 minutes, check with a wooden skewer;
  3. prepare the white chocolate mousse by crumbling 200g of white chocolate, covering it with hot water for 2 minutes, discard all the water but 2 soupspoons and mix vigorously, add 2dl of whipped cream and put in the fridge to cool;
  4. prepare the butter cream by mixing butter and icing sugar in a 1:2 ratio and adding some drops of milk, vanilla aroma and food coloring;
  5. now to assemble the cake: cut the cakes in half, a hole where you want to place your barbie in and then spread the white chocolate mousse trying not to go too close to the hole, add the strawberries put the upper layer on, crumbcoat the cake and put a second layer of buttercream on it, cover with fondant and stack supporting the upper cake;
  6. wrap your barbie in clean film and insert it in the cake, cover with fondant and decorate “glueing” the figurines with buttercream.
